Veggie Burger & Raw salad

Believe it or not, a few of us vegans have to watch our weight! Though generally speaking vegans are the slim and trim people in any crowd, which is probably why vegans have long life spans with less disease than people who eat a diet high in animal fats and proteins.

Compared to almost twenty years ago, when I became vegan, there are now zillions of tasty vegan products in the supermarket, like this Eatwell vegie burger (pictured). This is the red lentil variety which is high in protein, low in fat and no cholesterol. And for all of us, weight conscious or not, you can’t beat eating some raw veggies every day with a dash of lemon juice!

1 red lentil burger (or veg burger of your choice)
dash of canola oil
salad veggies such as: snow peas, carrots, mushroom, brocolli, tomatoes and baby spinach leaves
dash of lemon and/or dipping sauce of your liking

Heat burger one minute on each side in hot lightly oiled cast iron skillet.

Cut up vegetables and sprinkle with lemon juice

Note: you can also microwave burger
