Bombay Potato Pitas

I love it when I find new vegan product, especially when they say the word vegan on them! These Bombay potato/chickpeas are so simple you can just put them in the microwave for a couple of minutes and they’re done, great to take to work or if you’re in a rush. Here I’ve served them with some pita bread, but you could serve on rice or eat as they are.

1 packet of Bombay potatoes
1 large pita wrap
1 tbsp Tofutti sour ‘cream
1 handful spinach or fresh coriander

Heat the packet of Bombay potatoes as per packet instructions.

Warm the pita bread it the oven or a toaster.

Fill the bread with the potatoes, top with sour ‘cream’ and spinach/coriander.
