Potato and veggie salad

Serves 4-6

This makes a great side dish to serve at a bbq. Or you could go to town and add all your favourite veggies and turn it into a satisfying lunch.

750g baby potatoes
1 carrot, grated
1/2 red onion, finely sliced
A handful of green beans, chopped into 1-2cm pieces
1 tsp wholegrain mustard
3 tbsp vegan mayonnaise

Steam potatoes until cooked and set aside to cool.

Mix the mustard with the mayonnaise.

Cut the potatoes into halves or quarters, depending on their size. Mix in the chopped vegetables and stir through the mayonnaise until everything is well coated.
