Waffles with Fruit & Maple Syrup

This is a bit of a cheat as these waffles are store bought! If you have your own waffle maker then you can make up some batter using non-dairy milk. You don’t have to stick to the fruit we’ve used, try your own, you could also try sprinkling with chopped nuts and seeds.

4 Waffles
1 apple, cut into wedges
1 banana, thickly sliced
1 tablespoon soft brown sugar
¼ teaspoon cinnamon
maple syrup
Vegetable oil

Heat a little oil in a large pan and gently fry the apple and banana a little. Add sugar and cinnamon and continue frying until the fruit is soft and browned.

Toast the waffles and top with the fruit.

Drizzle with maple syrup and enjoy…
