Potato Wedges

Serves 2

 

2 tbsp olive oil

2 large (or 3 medium) potatoes

2 tsps olive oil

1 tsp vegetable stock powder

¼tsp paprika

¼tsp dried mixed herbs

1 garlic clove, minced (optional)

Freshly ground black pepper

 

Heat oven to 200°C.

 

Cut potatoes into thick wedges. Boil or steam for 5 minutes, drain and set aside to cool.

 

Mix oil, stock powder, paprika, pepper, herbs and garlic (if using).

 

Mix the oil mixture into the potatoes.

 

Spread on a baking tray and bake for approximately 30 minutes.
