Rosewater Poached Fruit with Easy Pistachio Ice Cream

Serves 4



I've used soft fruits here, but other fruits such as pears would work well too, just increase the cooking time.


2-3 pieces of fruit per person, de-stoned or seeded

200ml water

100ml white wine

1/2 cup sugar

1tbsp rosewater


Place all ingredients into a large saucepan and bring to a boil. Reduce heat and simmer for about 20 minutes.


You can serve the fruit warm or cool with vegan cream or ice cream. It goes especially well with the pistachio ice cream below.


1 1/2 cups vegan vanilla ice cream (eg. So Good)

1/2 cup vegan cream

1/2 cup ground pistachios


Mix together until well combined. Place in a plastic container, cover with plastic wrap and freeze for a short while until firm.
