Fancy some Thai but don't want all the extra oil? Try this! Super simple, refreshing and leaves you feeling light and sustained!
Serves 2 | Prep time: 15 mins | Cooking time: 0 mins
INGREDIENTS
- 2 medium zucchinis
- 2 carrots
- 1 capsicum
- 4 oyster mushrooms
- 1 cup bean shoots
- 1 cup red cabbage
- 1/2 cup of spring onions
- Sesame seeds
Sauce
- 1/4 cup of peanut butter
- 3 Tbsp of tamari
- 4 Tbsp of water
METHOD
- Spiralise the zucchini and carrots. If you haven’t got a spiraliser you can thinly slice the vegetables instead!
- Cut the rest of the vegetables into small portions and set aside in a bowl.
- To make the sauce, mix all ingredients together in a bowl or in a food processor. You may add more water if needed depending on how runny you prefer your satay!
- Once that is done, combine all vegetables and sauce in a bowl and top with sesame seeds and some crushed peanuts!
